Brunch away on these tasty mid-morning Mexican meals that are sure to please: young and old!

Ingredients

Multigrain tortilla

2 regular

Egg(s)

2 medium, lightly beaten

Light sour cream

1 tbs

Shortcut bacon

2 slice(s)

Fresh red chilli

1 tbs, finely chopped, (jalapeno)

Green shallot(s)

1 individual, finely chopped

Extra light cheddar cheese

25 g

Fresh coriander

1 tsp, finely chopped

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200˚C. Lightly spray 8 holes of a mini muffin tin with oil. Cut tortillas into quarters.
  2. Working with 1 tortilla piece at a time, microwave on medium for 20 seconds or until hot and soft. Line prepared tin with tortillas as you go.
  3. Beat eggs and sour cream in a medium bowl until combined. Stir in bacon, red jalapeños, green shallot, and cheese. Divide egg mixture among tortilla shells. Bake for 15 minutes or until filling is set. Serve with fresh coriander sprigs.
