Mega vegetable salad
Hans 98% Fat Free Short Cut Bacon
2 tsp, toasted
1 individual, stalk, thinly sliced
½ medium, thinly sliced
Canned corn kernels in brine, rinsed, drained
½ small, thinly sliced
Chickpeas, canned, rinsed, drained
240 g, (1 x 400g can)
Mixed salad leaves
- Heat a small non-stick frying pan over medium-high heat. Cook bacon for 1–2 minutes each side or until golden and crisp.
- Whisk oil, juice and seeds in a large bowl. Add bacon, celery, capsicum, corn, onion, snow peas, chickpeas and lettuce. Season with salt and freshly ground black pepper. Toss to combine. Serve with bread.
