This salad has a lovely, crunchy texture thanks to the variety of raw vegetables.

Ingredients

Shortcut bacon

3 slice(s)

Flaxseed oil

1 tbs

Lemon juice

1 tbs

Sesame seeds

2 tsp, toasted

Celery

1 stick(s), stalk, thinly sliced

Yellow capsicum

½ medium, thinly sliced

Canned corn kernels, rinsed and drained

165 g

Red onion

½ small, thinly sliced

Snow peas

60 g

Canned chickpeas, rinsed and drained

240 g, (1 x 400g can)

Mixed salad leaves

2 cup(s)

Wholegrain bread

2 slice(s)

Instructions

  1. Heat a small non-stick frying pan over medium-high heat. Cook bacon for 1–2 minutes each side or until golden and crisp.
  2. Whisk oil, juice and seeds in a large bowl. Add bacon, celery, capsicum, corn, onion, snow peas, chickpeas and lettuce. Season with salt and freshly ground black pepper. Toss to combine. Serve with bread.

Notes

You can use cooked fresh or frozen corn kernels instead of canned.Sesame seeds have a high oil content and should be stored in a cool, dark place to prolong their shelf-life. They can even be frozen in snap-lock bags for up to a year.
