This salad has a lovely, crunchy texture thanks to the variety of raw vegetables.


Ingredients
Shortcut bacon
3 slice(s)
Flaxseed oil
1 tbs
Lemon juice
1 tbs
Sesame seeds
2 tsp, toasted
Celery
1 stick(s), stalk, thinly sliced
Yellow capsicum
½ medium, thinly sliced
Canned corn kernels, rinsed and drained
165 g
Red onion
½ small, thinly sliced
Snow peas
60 g
Canned chickpeas, rinsed and drained
240 g, (1 x 400g can)
Mixed salad leaves
2 cup(s)
Wholegrain bread

Instructions

Heat a small non-stick frying pan over medium-high heat. Cook bacon for 1–2 minutes each side or until golden and crisp.

Whisk oil, juice and seeds in a large bowl. Add bacon, celery, capsicum, corn, onion, snow peas, chickpeas and lettuce. Season with salt and freshly ground black pepper. Toss to combine. Serve with bread.
