Ingredients
Fresh coriander
¾ cup(s), chopped
Fresh flat-leaf parsley
¾ cup(s), chopped
Garlic
2 clove(s), crushed
Fresh red chilli
1 whole, long, finely chopped
Ground cumin
1 tsp, toasted
Smoked paprika
½ tsp
Lemon juice
2 tbs
Olive oil
1 tbs
Canned chickpeas, rinsed and drained
1 400g can, (1x400g can)
Cherry tomatoes
350 g, mixed, chopped
Canned mackerel in brine, drained
230 g, (2x115g can), flaked
Fresh lemon rind
2 tsp, grated
Instructions

Combine coriander, parsley, garlic, chilli, cumin, paprika, juice and oil in a large bowl.

Add chickpeas, tomatoes and mackerel and toss to combine. Serve salad sprinkled with zest.
