It’s safe to say that the name says it all for this dessert! The yoghurt nicely cuts through the tangy lime flavour so it’s…well, delicious!

Ingredients

Reduced fat oil spread

60 g

Caster sugar

½ cup(s), (110g)

Lime rind

1 tbs, finely grated, plus extra to serve

Egg(s)

3 medium, separated

Light canned coconut milk

400 ml

Lime juice

cup(s), (80ml)

White self-raising flour

cup(s), (55g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a 4.5 litre (18 cup) slow cooker with oil. Using electric beaters, beat spread, sugar, rind and egg yolks in a small bowl until light and creamy.
  2. Gradually whisk in milk and juice until smooth and combined. Sift flour over egg mixture to combine.
  3. Using electric beaters, beat egg whites in a clean, dry bowl until soft peaks form. Gently fold egg whites through coconut mixture. Pour mixture into cooker. Cook, covered on low for 2 hours or until just set. Serve with extra lime rind.

Notes

SERVING SUGGESTION: 99% fat free plain yoghurt.TIP: You can use lemon rind and juice instead of lime, and reduced-fat milk instead of coconut milk.
