Lentil and corn soup

This hearty soup with tomato, lentils and corn is a surefire hit with the family.


Ingredients
Salted anchovies in oil, drained
2 medium, finely chopped
Garlic
1 clove(s), crushed
Lentils, canned, rinsed, drained
½ 400g can, (110g)
Canned diced tomatoes
½ 400g can, (200g)
Frozen corn
½ cup(s), (80g)
Oil spray
1 x 3 second spray(s)
Instructions

Lightly spray a medium saucepan with oil and heat over medium heat. Cook the anchovy and garlic, stirring, for 1 minute or until fragrant. Stir in the lentils, tomato, corn and ½ cup (125ml) water. Bring to the boil. Reduce heat and cook, covered, for 10 minutes for flavours to develop. Season with pepper.
