Lemon risoni and seafood salad

Ingredients
Risoni (orzo) pasta
½ cup(s), (110g)
Olive oil
3 tsp
Seafood marinara mix
500 g, fresh or frozen
Cherry tomatoes
2 cup(s), halved or quatered
Red onion
1 medium, finely chopped
Capers, rinsed, drained
3 tsp, chopped
Fresh lemon rind
1 tsp, grated
Lemon juice
2 tbs
Mixed salad leaves
4 cup(s), (120g)
Instructions

Cook risoni following packet instructions until tender. Drain and rinse under cold running water until cool. Drain again and combine with 1 teaspoon of oil.

Meanwhile, bring a large pot of water to the boil. Add marinara mix and cook 2 minutes or until just cooked. Drain and rinse under cold running water until cool. Drain again and transfer to large bowl.

Add tomatoes, onion, capers, rind and juice, risoni and remaining oil. Season with salt and pepper and toss to combine. Serve on a bed of leaves
