Lemon and poppy seed mug muffin

This quick and easy mug muffin is the perfect solution when you are short on time and looking for a sweet treat.


Ingredients
Reduced fat oil spread
2 tsp
Plain flour
7 tsp
Baking powder
¼ tsp
Caster sugar
1 tsp
Skim milk
1½ tbs
Vanilla bean extract, alcohol free
¼ tsp
Poppy seeds
½ tsp, plus extra to serve
Fresh lemon rind
¼ tsp, finely grated, plus extra to serve
Lemon curd
2 tsp
Oil spray
1 x 3 second spray(s)

Melt oil spread and set aside to cool. Sift flour, baking powder and sugar into a small bowl. Add milk, vanilla and the cooled spread, stir until smooth and combined. Stir in poppy seeds, lemon rind and 1 teaspoon lemon curd. Lightly spray a 200ml capacity microwave-safe mug with oil. Spoon mixture into prepared mug. Microwave on High (100%) for 1 minute 5 seconds or until risen and cooked in centre. Stand for 5 minutes. Serve topped with remaining 1 teaspoon lemon curd, a pinch of poppy seeds and strips of lemon rind.
