Ingredients

Olive oil

Brown onion

1 medium, finely chopped

Orange sweet potato (kumara)

200 g, grated

Zucchini

3 medium, grated

Garlic

2 clove(s), crushed

Tomato paste

2 tbs

Chicken stock

1½ cup(s), (375ml)

Tomato passata

1 cup(s), (260g)

97% fat-free deli sliced ham

200 g, chopped

Dry lasagne sheet

120 g, curly variety, broken into 6 pieces

Low-fat ricotta cheese

375 g, smooth

99% fat-free, plain or natural yoghurt, unsweetened

200 g

Grated parmesan cheese

¼ cup(s), (20g)

Extra light cheddar cheese

¼ cup(s), grated, (30g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Heat oil in a deep non-stick frying pan over medium heat. Cook onion, sweet potato and zucchini, stirring, for 5 minutes or until softened.
  2. Add garlic and cook for 30 seconds. Stir in tomato paste, stock and passata and bring to the boil. Reduce heat and simmer, uncovered, for 10 minutes or until thickened. Stir in ham. Add lasagne pieces and stir to combine.
  3. Meanwhile, combine ricotta cheese, yoghurt and parmesan in a bowl until smooth.
  4. Lightly spray a 5cm-deep, 25cm x 18cm ovenproof dish with oil. Spread ham mixture over dish, ensuring pasta pieces are covered in sauce and not stuck together. Spread with yoghurt mixture and sprinkle with cheese. Bake for 40–45 minutes or until golden and pasta is tender.
