Kangaroo burgers with beetroot

Kangaroo is high in both iron and zinc, so why not try it in these yummy filling burgers. With beetroot slaw, fresh green veg and crispy bread rolls, these burgers will definitely become a family favourite.

Ingredients

Oil spray

1 x 3 second spray(s)

Kangaroo mince

1 serve(s), (4 burger patties)

Coleslaw mix, without dressing

150 g, kale and beetroot slaw variety

Light sour cream

2 tbs

Lemon juice

1 tbs

Whole grain bread roll

4 individual, (4 x 60g rolls)

Iceberg lettuce

20 g, 4 leaves, Butter variety

Lebanese cucumber

½ medium, sliced

Tomato relish

2 tbs

Instructions

Heat a chargrill over medium-high heat. Lightly spray burger patties with oil. Cook for 3-4 minutes each side until charred and golden.

Combine kale and beetroot slaw with sour cream and lemon juice in a medium bowl.

Split rolls in half and fill with lettuce leaves, kale and beetroot slaw, Lebanese cucumber, burger patty and tomato relish.
