Ingrid's strawberry and lime mojito
Monk fruit sweetener
6 individual, thawed
2 tbs, (18 x fresh leaves), plus extra sprigs to garnish
1½ medium, chopped, plus extra slices to garnish
90 ml, white
1 cup(s), lime flavoured (240ml)
- To make sugar syrup, stir sweetener with ¼ cup (60ml) boiling water in a small jug until dissolved. Set aside in fridge to cool.
- In a cocktail shaker, muddle strawberries, mint, lime and sugar syrup. Stir through rum.
- Divide ice between three cocktail or tall glasses. Evenly pour over muddled strawberry mixture and top with soda water. Stir. Garnish with extra mint and lime slices. Serve.
