Huevos rancheros

Popular in Latin America, huevos rancheros is pronounced “way-vohs rahn-cheh-rohs”, which translates as ‘ranch-style eggs’.


Ingredients
Four bean mix, canned, rinsed and drained
1 400g can
Tomato passata
400 g
Dried chilli flakes
½ tsp
Egg(s)
4 medium
Multigrain tortilla
4 regular, (4 x 40g), warmed
Fresh coriander
2 tbs
Instructions

Combine the bean mix, pasta sauce and chilli in a medium frying pan over medium heat. Cook, stirring, for 5 minutes or until heated through.

Using a large spoon, make 4 indentations in the mixture. Gently break one egg into each indentation. Cover and cook for 6–7 minutes or until egg whites are set and yolks are still soft.

Meanwhile, heat tortillas following packet instructions. Sprinkle the huevos rancheros with the coriander and serve with the warmed tortillas.
