Popular in Latin America, huevos rancheros is pronounced “way-vohs rahn-cheh-rohs”, which translates as ‘ranch-style eggs’.
Four bean mix, canned, rinsed and drained
1 400g can

4 regular, (4 x 40g), warmed
- Combine the bean mix, pasta sauce and chilli in a medium frying pan over medium heat. Cook, stirring, for 5 minutes or until heated through.
- Using a large spoon, make 4 indentations in the mixture. Gently break one egg into each indentation. Cover and cook for 6–7 minutes or until egg whites are set and yolks are still soft.
- Meanwhile, heat tortillas following packet instructions. Sprinkle the huevos rancheros with the coriander and serve with the warmed tortillas.
