Hot and sour seafood soup

The spicy soup can be made in minutes using packaged and fresh ingredients.

Ingredients

Dry rice noodles

100 g

Vegetable mix, non-starchy, frozen

400 g

Chicken stock

2 cup(s), (500ml), salt-reduced

Red curry paste

cup(s), (tom yum paste)

Seafood marinara mix

400 g

Brown sugar

2 tbs

Fish sauce

1 tbs

Instructions

  1. Place the noodles in a medium heatproof bowl and cover with boiling water. Set aside for 5 minutes or until softened. Drain.
  2. Meanwhile, bring the stock and 2 cups (500ml) water to the boil in a large saucepan over high heat. Add the tom yum paste. Add the drained noodles, marinara mix and vegetables and simmer, uncovered, for 2 minutes or until just cooked through. Stir in the sugar and fish sauce.
