Honey soy tofu with stir-fried vegetables

Ingredients
Marinated tofu
200 g, honey soy
Vegetable mix, non-starchy, frozen
200 g
Choy sum
1 bunch(es), trimmed
Garlic
2 clove(s), sliced
Oyster sauce
1 tbs
Soy sauce
1 tbs
Brown rice microwave packet
250 g, (1 packet)
Oil spray
1 x 3 second spray(s)
Instructions

Heat an oil-sprayed wok or large non-stick frying pan over medium-high heat. Add tofu and cook for 1½ minutes each side or until browned. Set aside, cool slightly and cut into four pieces.

Cut choy sum stems into 3cm pieces and the leaves into 4cm pieces. Spray wok again with oil. Add the stir-fry vegetables and choy sum stems, and stir-fry for 4 minutes. Add garlic, sauces, choy sum leaves and tofu, stir-fry for a further minute.

Meanwhile, heat rice in microwave following packet instructions. Serve rice topped with stir-fry.
