Crunchy gingernut cookies ice-cream? Check! Warm pear infused with honey and cinnamon? You bet!

Ingredients

Low fat, no added sugar ice cream

220 g

Ginger biscuits

4 individual

Reduced fat oil spread

2 tsp

Honey

1 tbs

No added sugar orange juice

2 tbs

Cinnamon quill

1 whole

Pear(s)

2 large, corella variety, cored, cut into thin wedges

Instructions

  1. Place the ice-cream in a medium bowl. Fold in the biscuits. Place in the freezer for 30 minutes to chill.
  2. Melt the spread in a small frying pan over medium heat. Add the honey, orange juice and cinnamon and bring to the boil. Add the pear and cook, covered, stirring occasionally, for 6-8 minutes or until the pear is tender and the sauce has thickened slightly.
