Sweet honey and mustard combine to make an ace topping for roasted pork chops. Try it also on grilled chicken or lean lamb steaks.

Ingredients

Pork loin chop, raw

648 g, (buy 4 x 180g chops), fat trimmed

Dijon mustard

¼ cup(s), (70g)

Honey

1 tbs

White wine vinegar

1 tbs

Mustard powder

¼ tsp

Garlic powder or flakes

¼ tsp, (powder)

Fresh rosemary

3 sprig(s)

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C. Lightly spray a large baking dish with oil. Season both sides of pork chops with salt and pepper.
  2. Whisk Dijon mustard, honey, vinegar, mustard powder, garlic powder and 1 tablespoon water in a small bowl.
  3. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Add pork chops and rosemary sprigs to hot pan. Cook chops for 2 minutes on each side, or until well browned. Transfer to prepared baking dish.
  4. Reserve half the mustard mixture in a separate small bowl for serving. Brush remaining mustard mixture over chops. Bake for 8-10 minutes, until pork is just cooked through. Spoon over reserved mustard mixture to serve.

Notes

SERVING TIP: These meaty chops are great served with steamed green beans and mashed potatoes.
