Nutty ice-cream waffle cones

Reduced fat vanilla ice cream
8 individual, (8 x 14g cones)
½ cup(s), (95g), (Vienna), coarsely chopped
2 tbs, (Vienna), extra (see tip)
- Place ice-cream in a large bowl. Add almonds, stirring until well combined. Transfer to an airtight container, cover and place in freezer for 3–4 hours or until firm.
- Scoop ice-cream into waffle cones and serve sprinkled with extra almonds. Serve immediately.
TIP: Also known as French vanilla almonds, Vienna almonds are sugar coated. They are available from delicatessens and specialty nut stores. If you cannot find Vienna almonds, sub in regular almonds. You can use plain cones instead of waffle cones or serve in bowls.
