Hoisin pork in lettuce cups

Ingredients
Sesame oil
2 tsp
Green shallot(s)
4 individual, trimmed, thinly sliced
Red capsicum
1 large, finely chopped
Pork mince, raw
500 g, lean
Garlic
2 clove(s), crushed
Fresh red chilli
1 whole, deseeded, chopped
Canned water chestnut, rinsed, drained
140 g, (227g can)
Hoisin sauce
60 ml
Soy sauce
1 tbs
Lemon juice
¼ cup(s), (60ml)
Fresh coriander
½ cup(s), coarsely chopped
Cos lettuce
280 g, (baby)
Instructions

Heat sesame oil in a non-stick frying pan on a medium heat. Add shallots and capsicum and cook, stirring for 5 mins or until soft. Add mince and cook for 5-6 minutes or until cooked. Add garlic and chilli and cook for 1 min or until fragrant.

Add water chestnuts, hoisin sauce, soy sauce and juice to mince mixture. Cook for 1-2 mins or until heated through. Stir in coriander then carefully spoon mince mixture into lettuce leaves. Serve immediately.
