Add some spice to your weekly meals with this arrabiata. An Italian pasta sauce made with added chilli, it adds great spice and flavour to the dish.

Ingredients

Wholemeal pasta, dry

280 g

Olive oil

1 tbs

Red onion

1 medium, thinly sliced

Shortcut bacon

125 g, diced

Garlic

2 clove(s), crushed

Dried chilli flakes

½ tsp

Tomato paste

1 tbs

Canned diced tomatoes

400 g

Capers, rinsed, drained

1 tbs

Baby spinach

75 g

Grated parmesan cheese

Instructions

  1. Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain. Return to pan.
  2. Meanwhile, heat oil in a large non-stick frying pan over medium heat. Add onion and cook, stirring, for 5 minutes or until softened. Add bacon and cook, stirring, for 3 minutes or until golden and crisp. Add garlic and chilli and cook for 1 minute.
  3. Add tomato paste, tomatoes, capers and ⅓ cup (80ml) water and bring to the boil. Reduce heat and simmer, uncovered, for 6–8 minutes or until slightly thickened. Season with freshly ground black pepper.
  4. Add tomato sauce and spinach to pasta and toss gently to combine. Serve sprinkled with parmesan.

SERVING SUGGESTION: Baby rocket leaves.TIP: You can use pancetta (fat trimmed) instead of bacon.
