Ham, cheese and rocket omelette

A light and fluffy omelette can be whipped up in minutes and gently folded over a tasty savoury filling.
97% fat-free cottage cheese
Fresh flat-leaf parsley
2 tsp, finely chopped
97% fat-free deli sliced ham
30 g, coarsely chopped
½ cup(s), leaves
1 x 3 second spray(s)
- Using a fork, whisk the eggs, cottage cheese and parsley in a small bowl until well combined. Season with salt and freshly ground black pepper.
- Lightly spray a small (18cm) non-stick frying pan with oil and heat over medium-high heat. Pour egg mixture into pan and cook for 30 seconds or until the base of the omelette is set. Using a spatula, draw the edge of the omelette into the centre and allow the uncooked mixture to run underneath. Continue doing this until the egg mixture is nearly set.
- Sprinkle the ham and rocket over half of the omelette. Fold omelette over to enclose the filling. Slide onto a plate and serve immediately.
You can use 1 tablespoon reduced-fat grated cheddar cheese and pan-fried mushrooms instead of the cottage cheese and ham. Add the cheese with the mushrooms and rocket when you make the filling. SERVING SUGGESTION: Wholegrain bread.
