Hit up the deli for some lean slices of leg ham to serve with a colourful caprese salad – it's like a yummy sandwich without the bread!

Ingredients

Trimmed leg ham

200 g, fat trimmed, thinly sliced (buy 250g)

Cherry tomatoes

500 g, (truss tomato), halved

Bocconcini

100 g, baby, halved

Fresh basil

¼ cup(s), chopped

Mixed salad leaves

40 g

Balsamic vinegar

2 tbs

Olive oil

1 tsp

White sourdough bread

100 g, sliced

Instructions

  1. Place ham, tomatoes, bocconcini, basil and salad leaves in a large serving bowl. Whisk vinegar and oil in a small bowl, then drizzle over salad.
  2. Season with salt and freshly ground black pepper, then toss to combine. Serve ham caprese salad with sliced sourdough bread.

Notes

TIP: Place tomatoes, basil and vinegar in a bowl and stand for 15 minutes. The vinegar draws the juice from tomatoes to create a lovely sweet sauce. Instead of bread, add 2 cups (296g) cooked pasta, such as penne or fusilli.Try: Just make a caprese salad by omitting the ham.
