Grilled turkey breast with lemon and ginger glaze

Ingredients
Skinless turkey breast
500 g, (4 x 125g fillets)
Olive oil
1 tbs
Fresh ginger
2 tsp, finely grated
Garlic
1 clove(s), crushed
Fresh lemon rind
1 tbs, thinly sliced
Lemon juice
1 tbs
No added sugar orange juice
100 ml
Mirin seasoning
1 tbs
Honey
2 tsp
Fresh chives
1 tbs, chopped
Baby carrot
12 individual, steamed
Broccolini
1 bunch(es), (160g) steamed
Sugar snap peas
150 g, steamed
Baby potatoes, cooked without added fat
8 small, (320g)
Instructions

Brush the turkey steaks with half the oil. Heat a large non-stick frying pan over medium-high heat. Cook the turkey for 2-3 minutes each side or until golden and cooked through. Transfer to a plate and cover to keep warm.

Heat the remaining oil in the pan over medium heat. Add the ginger, garlic and lemon rind and cook, stirring, for 1 minute or until fragrant. Add the lemon juice, orange juice, mirin and honey and bring to the boil. Boil for 2-3 minutes or until reduced by half.

Divide the turkey among serving plates. Drizzle with the glaze and sprinkle with the chives. Serve with carrots, broccolini, peas and potatoes.
