Scotch fillet steak is known for its velvety texture and robust flavour. Here, we serve it topped with roasted capsicum and onion for a simple but hearty meal. For added freshness, add an extra serve of veg or green leafy salad.

Ingredients

Red capsicum

1 large, cut into thick strips

Brown onion

1 large, halved, thickly sliced

Beef scotch fillet (rib eye), raw

450 g, boneless, (buy 2 x 250g steaks), fat trimmed

Dried oregano

2 tsp

Oil spray

3 x 3 second spray(s)

Instructions

  1. Preheat oven to 220°C. Lightly spray a non-stick baking tray with oil.
  2. Place capsicum and onion on prepared tray. Spray with oil, sprinkle with oregano and season with salt and pepper. Bake for 12-15 minutes, until lightly browned and tender.
  3. Meanwhile, season steaks with salt and pepper. Lightly spray a non-stick grill pan or barbecue with oil, then heat over medium-high heat. Cook steaks for about 3 minutes on each side, or until cooked to your liking. Transfer to a plate and rest for 5 minutes. Slice steaks and serve topped with roasted capsicum and onion.
