Grilled peanut pork skewers

Heat up the barbie for these flavour-packed marinated pork skewers in a delicious nutty sauce.

Ingredients

Roasted peanuts

25 g, (25g)

Fresh red chilli

1 whole, deseeded, chopped

Curry powder

1 tbs

Brown sugar

½ tsp

Fresh ginger

2 tsp, grated

Soy sauce

2 tbs

Soy sauce

1 tsp, extra, for dressing

Pork fillet or tenderloin, raw

480 g, (buy 600g)

Baby spinach

100 g

Cherry tomatoes

200 g

Lebanese cucumber

1 medium, thickly sliced

Sesame oil

2 tsp

Instructions

  1. Process peanuts, chilli, curry powder, sugar, ginger and soy sauce in a food processor until smooth. Pour into a shallow dish. Add pork and turn to coat. Cover and place in fridge for 1 hour.
  2. Thread pork onto 8 wooden or metal skewers (see tip). Lightly spray skewers with oil and season with salt and pepper. Preheat a chargrill or barbecue over medium-high heat. Cook skewers for 3–4 minutes each side or until cooked to your liking.
  3. Meanwhile, combine spinach, tomatoes and cucumber in a large bowl. Drizzle with sesame oil and extra soy. Serve skewers with salad.

Notes

SERVING SUGGESTION: Long-grain white rice. TIP: Soak wooden skewers in cold water for 10 minutes before using to stop them burning during cooking.
