Grilled lamb patties in pitas

These pitas are the perfect low-fuss weekend lunch for the whole family. If you’re not a fan of lamb, use turkey or beef mince instead. You could also throw the pita bread and capsicum in the pan for a minute to get nice grill marks.


Ingredients
Lean lamb mince
400 g
Onion
½ medium, finely chopped
Fresh mint
2 tbs, finely chopped
Ground coriander
½ tsp
Wholemeal pita bread
4 large, (4 x 70g), halved, warmed
Cos lettuce
1⅓ cup(s), (80g)
Red capsicum
1 medium, thinly sliced
Lebanese cucumber
1 medium, halved lengthwise, thinly sliced
99% fat-free, plain Greek yoghurt, unsweetened
¼ cup(s), (60g)
Oil spray
1 x 3 second spray(s)
Instructions

Place lamb, onion, mint and coriander in a medium bowl. Season with salt and pepper and mix to combine. Shape into 8 (1cm-thick) patties.

Lightly spray a grill pan or barbecue with oil and heat over medium-high heat. Cook patties for about 4 minutes on each side or until lightly charred and cooked through.

Fill each pita half with lettuce, capsicum, cucumber and 1 patty. Dollop a heaped teaspoon of yoghurt over filling and season with pepper. Serve 2 pita halves per person.
