Grilled brown sugar mango with pistachios

Fresh mangoes are great as they are but when you add a sprinkle of sugar and spice it makes them twice as nice!


Ingredients
Mango
2 medium
Brown sugar
1 tbs
Ground cinnamon
1 tsp
Vanilla yoghurt, 99% fat-free, no added sugar
200 g
Pistachios
¼ cup(s), chopped (35g)
Instructions

Cut cheeks from each mango. Using a small, sharp knife, score each mango cheek diagonally in both directions. Combine sugar and cinnamon in a bowl. Sprinkle sugar mixture over mango cheeks.

Preheat a chargrill or barbecue over high heat. Cook mango, cut-side down, for 1–2 minutes or until caramelised.

Serve mangoes topped with the yoghurt and sprinkled with pistachios.
