You can’t beat a classic and this dish is made more timeless with the addition of parmesan, olive oil and lemon, which add a touch of class

Ingredients

Asparagus

2 bunch(es), chopped

Green string beans

200 g

Sugar snap peas

200 g

Frozen green peas

2 cup(s), (240g)

Lemon juice

1 tbs

Olive oil

1 tbs

Grated parmesan cheese

¼ cup(s), (20g)

Salt

½ tsp

Pepper

½ tsp

Instructions

  1. Boil, steam or microwave asparagus, green beans, sugar snap peas and peas, separately, until just tender. Rinse under cold water. Drain. Place vegetables in a serving bowl and drizzle with lemon juice and olive oil. Toss to combine.
  2. Sprinkle with parmesan cheese and season with salt and freshly ground black pepper. Serve.
