Chewy squares of rich chocolate bursting with real fruit pieces. A perfect after-dinner bite or mid-afternoon snack with coffee.

Ingredients

Cocoa powder

Low fat chocolate mousse

3 tub(s)

Reduced fat oil spread

80 g, melted

Brown sugar

¾ cup(s), (165g)

Egg(s)

2 medium, lightly beaten

Vanilla bean extract

2 tsp

Plain flour

¾ cup(s), (110g)

White self-raising flour

Cherries

1 cup(s), frozen, (150g)

Raw almonds

1 tbs, slivered, toasted

Instructions

  1. Preheat oven to 180°C or 160°C fan- forced. Line a 20cm x 30cm lamington tin with baking paper, extending the paper 3cm on both long sides.
  2. Whisk together cocoa and NESTLÉ DIET Chocolate Mousse in a large bowl. Add spread, sugar, eggs, vanilla and both flours, stirring to combine. Spread mix into prepared tin. Sprinkle with cherries and slivered almonds and bake for 20 minutes or until a skewer inserted in the centre comes out with crumbs clinging to it. Cool brownies in tin, then cut into 15 serves. Remove from tin without paper and serve.

Notes

TIP: Brownies can be stored in an airtight container at room temperature for up to three days.
