Ingredients

Apple(s)

1½ medium, finely chopped

Honey

1 tsp

Fresh strawberries

150 g, halved

Banana(s)

1½ medium, sliced

Canned cannellini beans

60 g, rinsed, drained

Butter

2 tsp, at room temperature

Brown sugar

1 tbs

Rolled oats, dry

25 g

Plain flour

1 tbs

Instructions

  1. Preheat oven to 200°C. Place apple and honey in a 10cm x 20cm loaf tin and toss to coat. Cover with foil and bake for 15 minutes. Stir through strawberry and banana. Divide mixture among three 1-cup (250ml) capacity oven-proof dishes.
  2. To make crumble, use a fork to crush beans in a medium bowl. Using fingers, rub in butter, sugar, oats and flour until mixture resembles coarse crumbs. Sprinkle crumble over fruit. Bake for 20 minutes or until golden and bubbly. Set aside to cool slightly. Serve warm or at room temperature.
