Scoop colourful melon and sweet pineapple into perfect little balls for a dessert that’s as healthy as it is fun

Ingredients

Kiwifruit

2 medium, peeled

Watermelon

500 g

Rockmelon or cantaloupe

400 g

Paw paw or papaya

250 g, seeds removed

Pineapple

250 g

Caster sugar

cup(s), (75g)

Fresh lemon rind

2 tsp, finely grated

Lemon juice

¼ cup(s), (60ml)

Passionfruit(s)

3 medium, halved

Instructions

  1. Using a melon baller, scoop kiwifruit, watermelon, rockmelon, papaya and pineapple into balls and place in a large serving bowl. Refrigerate for 30 minutes.
  2. Meanwhile, combine sugar, rind, juice and ½ cup (125ml) water in a small saucepan over low heat. Cook, stirring, for 1–2 minutes or until sugar has dissolved. Increase heat and bring to the boil. Boil for 3–4 minutes or until thickened slightly. Cool. Stir in the passionfruit pulp.
  3. Pour passionfruit syrup over fruit balls just before serving.

Notes

SERVING SUGGESTION: Low-fat natural yoghurt. TIPS: You can cut the fruit into cubes instead of balls if you don't have a melon baller. You will need one-quarter of both a rockmelon and a pineapple, plus half a papaya for this recipe.
