Pair a slice of this sweet dried fruit, coconut and cereal loaf with a cup of hot tea.

Ingredients

Unsweetened bran flakes cereal

70 g

Dried cranberries

1 cup(s), (130g)

Dried apricots

½ cup(s), (75g), chopped

Coconut, grated and desiccated

40 g

Raw sugar

½ cup(s), (110g)

Skim milk

1 cup(s), (250ml)

Wholemeal self-raising flour

1 cup(s), (160g)

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine All-Bran, cranberries, apricots, coconut, sugar and milk in a large bowl. Cover and refrigerate overnight.
  2. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 9 x 19cm (base measurement) loaf tin with oil. Line base and 2 long sides with 1 sheet of baking paper, allowing paper to hang over the edges of the tin.
  3. Gently fold flour into fruit mixture until just combined (do not over-mix). Spread mixture into prepared tin. Bake for 1 hour 15 minutes or until cooked when tested with a skewer. Set aside loaf in tin for 10 minutes before turning out onto a wire rack to cool. Serve.

Notes

Store in an airtight container for up to 4 days or freeze for up to 1 month.
