Banana slices are sandwiched with creamy almond butter, then dipped into melted chocolate for a tasty sweet treat. Keep these on hand in an airtight container in the freezer for a salty-sweet treat anytime. Whip up a double batch when you have extra bananas you’re not sure what to do with. We trim the ends to get uniform slices for sandwiching, but don’t toss those trimmings. You can freeze them for smoothies later.

Banana(s)

2 small, ends trimmed

Almond butter

1 tbs

Dark chocolate melts

40 g

Instructions

  1. Cut each banana into 8 x 1½ cm-thick slices. Spread almond butter evenly over 8 banana slices. Top with the remaining banana slices. Transfer to a foil-lined plate. Cover with foil and place in freezer for 30 minutes or until firm.
  2. Microwave chocolate in a small microwave-safe bowl on High (100%) for 30 seconds, then stir. Continue to microwave on High (100%) in 20-second bursts, stirring until smooth and melted.
  3. Dip half of each frozen banana bite in the melted chocolate. Place on the foil-lined plate and return to the freezer for a further 2 minutes or until chocolate is set. Transfer banana bites to a container and store in the freezer for up to 1 month.
