A blend of fresh strawberries, raspberries, and banana mixed with creamy Greek yoghurt creates a refreshing fruity base, while a decadent dark chocolate coating adds the perfect touch of sweetness. Easy to make and even easier to enjoy, these bite-sized treats are a great after dinner delight.


Ingredients
Fresh strawberries
¾ cup(s), chopped
Fresh raspberries
¾ cup(s)
Banana(s)
1 medium
99% fat-free, plain Greek yoghurt, unsweetened
¾ cup(s), (180g)
Caster sugar
3 tsp
Vanilla bean extract
¼ tsp
Dark chocolate

Instructions

Mash strawberries, raspberries, and banana with a fork in a medium bowl until mixture is soft and combined. Stir in yoghurt, sugar, and vanilla. Divide yoghurt-fruit mixture between 15 silicone ice cube moulds. Tap the moulds once on the work surface to remove any air bubbles. Freeze for at least 5 hours.

Remove yoghurt-fruit bites from the moulds, place them on a baking paper-lined plate, and return to freezer.

Heat chocolate in a small, heatproof bowl in the microwave or over a water bath in 30 second bursts, until melted. Dip ⅓ of each bite into chocolate, upside down, one at a time, and let it drip briefly. Place bites back on the same plate, drizzle with remaining chocolate, and freeze for at least 15 minutes. Serve.
