A blend of fresh strawberries, raspberries, and banana mixed with creamy Greek yoghurt creates a refreshing fruity base, while a decadent dark chocolate coating adds the perfect touch of sweetness. Easy to make and even easier to enjoy, these bite-sized treats are a great after dinner delight.

Ingredients

Fresh strawberries

¾ cup(s), chopped

Fresh raspberries

¾ cup(s)

Banana(s)

1 medium

99% fat-free, plain Greek yoghurt, unsweetened

¾ cup(s), (180g)

Caster sugar

3 tsp

Vanilla bean extract

¼ tsp

Dark chocolate

Instructions

  1. Mash strawberries, raspberries, and banana with a fork in a medium bowl until mixture is soft and combined. Stir in yoghurt, sugar, and vanilla. Divide yoghurt-fruit mixture between 15 silicone ice cube moulds. Tap the moulds once on the work surface to remove any air bubbles. Freeze for at least 5 hours.
  2. Remove yoghurt-fruit bites from the moulds, place them on a baking paper-lined plate, and return to freezer.
  3. Heat chocolate in a small, heatproof bowl in the microwave or over a water bath in 30 second bursts, until melted. Dip ⅓ of each bite into chocolate, upside down, one at a time, and let it drip briefly. Place bites back on the same plate, drizzle with remaining chocolate, and freeze for at least 15 minutes. Serve.

Notes

Instead of fresh berries you can also use thawed frozen berries.
