In less than 10 minutes, turn your left over frittata into a hearty breakfast sandwich by adding a slice of bacon and some leafy greens. Use whatever you have on hand. Baby rocket or mixed salad leaves would work just as well as spinach.

Ingredients

Shortcut bacon

23 g, use (1 x 25g), fat trimmed

Tray bake veggie frittata (WW recipe)

1 slice(s)

Baby spinach

⅓ cup(s), (7g)

Tomato(es)

6 g, cut (2 x 3g ) thin slices

Multigrain bagel

1 individual, split, toasted, (1 x 90g)

Instructions

Heat a small non-stick frying pan over medium-high heat. Cook bacon for 1-2 minutes on each side until crisp and lightly golden.

Meanwhile, microwave frittata on High (100%) for 45 seconds-1 minute, until heated through.

Layer frittata, bacon, spinach and tomato on the bagel base. Cover with bagel top.
