A super simple, fresh and tasty pasta dish with tomatoes, peas and edamame beans topped with fresh crumbled goat’s cheese.

Ingredients

Dry wholemeal pasta

200 g, penne

Frozen green peas

1 cup(s), (120g)

Edamame beans

1 cup(s), (150g), frozen

Tomato(es)

500 g, chopped

Olive oil

1 tbs

Garlic

2 clove(s), crushed

Fresh basil

cup(s)

Soft goat's cheese

50 g, crumbled

Instructions

  1. Cook pasta in a large saucepan of boiling water following packet instructions or until al dente. Add peas and edamame beans during last 4-5 minutes of cooking. Drain well and return to pan.
  2. Add tomatoes, oil, garlic and basil. Season well with salt and pepper and toss to combine. Serve topped with crumbled goat’s cheese.

Notes

TIP: Replace the goat’s cheese with reduced-fat feta if you prefer. You can use any shape of pasta in this recipe
