Ingredients
Almond meal
50 g
Cocoa powder
¼ cup(s), (25g)
Banana(s)
2 medium, very ripe
Egg(s)
2 medium
Cocoa powder
3 tsp, extra, to serve
Brown sugar
3 tsp
99% fat-free, plain or natural yoghurt, unsweetened
⅓ cup(s), (80g)

Preheat oven to 180°C.

Process almonds, ¼ cup (25g) cocoa powder, bananas and eggs in a food processor until well combined and smooth. Divide mixture among four 200ml-capacity ovenproof dishes. Place dishes on a baking tray.

Reserve 1 teaspoon of extra cocoa powder and combine remaining with brown sugar in a small bowl. Sprinkle sugar mixture evenly over puddings. Carefully pour 25ml boiling water over top of each pudding (over back of a spoon to disperse it more widely). Bake for 20 minutes or until firm to a gentle touch. Serve topped with yoghurt and sprinkled with remaining extra cocoa powder.
