Ingredients
Extra light cream cheese
125 g, softened
Lemon juice
1 tbs
Fresh dill
1 tbs, finely chopped
Fresh flat-leaf parsley
1 tbs, finely chopped
Capers, rinsed, drained
2 tsp, finely chopped
Red onion
¼ small, finely chopped
Wholemeal bread
208 g, (Buy 8 x 30g slices)
Baby spinach
1 cup(s), (30g)
Smoked salmon
100 g, slices
Instructions

To make the salmon and fresh herb sandwiches, stir cream cheese and juice in a medium bowl until smooth. Add dill, parsley, capers and onion and stir until combined. Season with salt and freshly ground black pepper. Spread cream cheese mixture onto bread. Top 4 slices bread with spinach and salmon. Sandwich with remaining bread. Remove crusts and cut each sandwich into 3 fingers. Serve.
