Finger sandwiches with chicken, celery and pecans

Whether you’re catering for a party or a few guests, these gourmet sandwiches promise to satisfy. Celery and pecan give crunch to a traditional chicken sandwich


Ingredients
Cooked skinless chicken breast
200 g, finely chopped
Celery
2 stick(s), finely chopped
Pecans
¼ cup(s), (30g), toasted, finely chopped
Fresh chives
2 tbs, finely chopped
Low-fat mayonnaise
¼ cup(s), (75g)
Wholemeal bread
208 g, (8 x 30g slices)
Instructions

Place chicken, celery, pecans, chives and mayonnaise in a medium bowl and mix until combined. Season with salt and freshly ground black pepper.

Spread chicken mixture onto 4 slices bread and sandwich with remaining bread. Remove crusts and cut each sandwich into 3 fingers. Serve.
