This fig, walnut and pecan slice is sweet, crunchy and just plain satisfying!

Ingredients

Walnuts

60 g, finely chopped

Pecans

60 g, finely chopped

Egg(s)

2 medium

Caster sugar

½ cup(s), (110g)

Vanilla bean extract

1 tsp

White self-raising flour

½ cup(s), (75g)

Dried fig(s)

250 g, finely chopped

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Spread walnuts and pecans on a baking tray and bake for 3–4 minutes or until toasted. Cool, then finely chop.
  2. Reduce oven to 180°C or 160°C fan-forced. Lightly spray a 20cm square cake tin with oil. Line base and sides with baking paper. Using electric beaters, beat eggs, sugar and vanilla in a medium bowl until thick and creamy. Gently fold in flour, figs, walnuts and pecans.
  3. Spread mixture into prepared tin. Bake for 30 minutes or until cooked when tested with a skewer. Stand slice in tin for 10 minutes before turning out onto a wire rack to cool. Cut into 12 rectangles to serve.
