English muffins with grilled banana and yoghurt
Give your morning a sweet and healthy start with these incredibly delectable muffins
Banana, lady finger or sugar
4 individual, peeled, halved lengthways
4 regular, (4x63g), split, toasted
Fruit flavoured yoghurt, low-fat, added sugar
300 g, (peach and mango)
2 tbs, slivered, toasted
- Preheat a chargrill pan over high heat. Brush cut side of bananas with half the maple syrup, then cook, cut side down, for 2–3 minutes or until caramelised. Turn and cook for 1–2 minutes or until heated through.
- Serve English muffins topped with grilled bananas, peach and mango yoghurt, slivered almonds and drizzled with remaining maple syrup.
TIP: You can also cook bananas in a non-stick frying pan.
