Onion
1 medium, thinly sliced
Deli-sliced leg ham
15 slice(s), coarsely chopped
Cherry tomatoes
15 individual, quartered
Reduced fat oil spread

Preheat oven to 190°C. Line a 12-hole ⅓ cup (80 ml) capacity muffin tray with paper cases.

Heat spread in a medium non-stick frying pan over medium heat. Sauté onions, ham and tomatoes for 5 minutes. Divide mixture evenly into 12 muffin cases.

Whisk together eggs and ⅔ cup (165ml) water, season with salt and pepper. Divide batter into muffin cases. Bake for approximately 35-40 minutes, until golden.
