Minestrone means ‘thick soup’ because it’s full of vegetables, beans and pasta. Buon appetito!

Ingredients

Brown onion

1 large, finely chopped

Garlic

2 clove(s), crushed

Carrot(s)

2 large, cut into 1cm pieces

Celery

3 stick(s), thinly sliced

Swede

½ medium, cut into 1cm pieces

Vegetable stock

6 cup(s), (1.5L)

Canned borlotti beans, rinsed, drained

1 400g can

Canned diced tomatoes

1 400g can

Tomato paste

1 tsp

Dried herbs

3 tsp, mixed Italian variety

Dry pasta

50 g, spaghetti variety, broken into short lengths

Green string beans

100 g, cut into 3cm pieces

Fresh basil

½ cup(s), leaves

Instructions

  1. Place onion, garlic, carrots, celery, swede, stock, borlotti beans, tomatoes, tomato paste and dried herbs in a large pot over high heat. Bring to the boil. Reduce heat and simmer, uncovered, stirring occasionally, for 20–25 minutes, until vegetables are tender.
  2. Add broken spaghetti and green beans. Simmer, uncovered, for 8–10 minutes, until pasta is tender. Season with salt and pepper. Serve topped with basil and extra cracked pepper.

Notes

COOK'S TIP: For extra flavour, finely grate some parmesan cheese over the top of each serving. TO REFRIGERATE: Place soup in a large reusable container or transfer individual portions to separate reusable containers and store for up to 5 days. To reheat, simmer gently in a saucepan or microwave individual portions until hot, adding a little extra water if the soup is too thick. TO FREEZE: Store as above for up to 6 months. Thaw at room temperature. Reheat as above.
