This wonderfully rich-tasting fish stew is great for sharing with friends.

Ingredients

Red onion

2 medium, thinly sliced

Canned diced tomatoes

400 g

Seafood marinara mix

300 g

Baby spinach

100 g

Garlic

2 clove(s), thinly sliced

Dried chilli flakes

1 tsp

Dried herbs

1 tsp, mixed variety

Vegetable stock cube

1 individual, to make 200ml of gluten free stock

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook onions for 10 minutes or until softened and starting to caramelise—add a splash of water if they start to stick to pan. Add garlic and cook for a further 1 minute.
  2. Add tomatoes, chilli, herbs and stock to pan. Bring to the boil. Reduce heat and simmer for 20 minutes.
  3. Add marinara mix and spinach and gently stir to coat in sauce. Season with salt and pepper. Gently simmer for 5 minutes or until fish is cooked through and starts to flake and spinach has wilted. Serve.

Notes

TIP: You could serve this with 150g boiled baby potatoes per serve
