Add 1 tbs of cocoa powder to the coffee mixture to take this parfait to another level.


Ingredients
Instant coffee powder
3 tsp
Low-fat ricotta cheese
300 g
99% fat-free, plain Greek yoghurt, unsweetened
¾ cup(s)
Icing sugar mixture
¼ cup(s)
Biscuits, chocolate chip, reduced-fat
60 g, broken into small pieces
Instructions

Combine coffee and 3 tsp boiling water in a small bowl until coffee has dissolved. Cool.

Place ricotta, yoghurt, icing sugar and coffee mixture in a food processor. Process until smooth.

Divide half the ricotta mixture among four 2/3 cup (160ml) capacity serving glasses. Sprinkle two-thirds of biscuit pieces evenly over ricotta mixture. Top with remaining ricotta mixture and remaining biscuit pieces. Cover and refrigerate for 3 hours or until set. Serve.
