Ingredients

White self-raising flour

1 cup(s), (150g)

Fresh dates

140 g, coarsely chopped (1 cup)

Shredded or desiccated coconut

cup(s), (40g)

Caster sugar

cup(s), (75g)

Crystallised ginger

½ cup(s), coarsely chopped (110g)

Egg(s)

1 medium, lightly beaten

Reduced fat oil spread

¼ cup(s), melted (60g)

Instructions

  1. Preheat oven to 180°C. Lightly spray a 16cm x 25cm (base measurement) lamington tin with oil. Line the base and two long sides with baking paper, allowing the paper the hang 5cm over the sides.
  2. Combine the flour, date, coconut, sugar and ginger in a large bowl. Stir in the egg and spread until combined. Press the dough into the prepared tin. Bake for 25 minutes or until a skewer inserted in the centre comes out clean. Cool in tin. Cut into 15 squares.
