Curried prawns with zoodles and spinach

Ingredients

Raw peeled prawns

500 g, thawed from frozen

Curry powder

1 tbs

Zucchini

4 medium, cut into spirals (see notes)

Baby spinach

200 g

Instructions

Toss prawns in curry powder to coat. Heat a deep non-stick frying pan over high heat. Cook prawns, in 2 batches, for 2 minutes each side or until pink. Transfer to a plate.

Cook zucchini, tossing, in same pan over medium-high heat for 2 minutes or until just tender. Return prawns to pan with spinach and toss for 1-2 minutes or until spinach has just wilted. Season with salt and pepper to serve.
