Curried prawns with zoodles and spinach

Ingredients
  • green prawns
    500 g, thawed from frozen
  • curry powder
    1 tbs
  • zucchini
    4 medium, cut into spirals (see notes)
  • baby spinach leaves
    200 g
Instructions
  1. Toss prawns in curry powder to coat. Heat a deep non-stick frying pan over high heat. Cook prawns, in 2 batches, for 2 minutes each side or until pink. Transfer to a plate.
  2. Cook zucchini, tossing, in same pan over medium-high heat for 2 minutes or until just tender. Return prawns to pan with spinach and toss for 1-2 minutes or until spinach has just wilted. Season with salt and pepper to serve.
Notes
TIPS: Use a spiralizer to cut zucchini into spirals (zoodles). The zucchini will create liquid as it cooks, creating a tasty sauce. ADD IT: 1 long fresh red chilli (finely chopped) with spinach in Step 2. SWAP IT: 2 zucchini for 2 carrots.
