Curried cauliflower

This yummy curried cauliflower is ready in 15 minutes!


Ingredients
Olive oil
1 tbs
Curry powder
2 tsp
Cauliflower
1 cup(s), medium size, cut into small florets
Tomato(es)
2 medium, coarsely chopped
99% fat-free, plain or natural yoghurt, unsweetened
2 tbs
Fresh coriander
¼ cup(s), leaves
Instructions

Heat oil in a large non-stick frying pan over medium heat. Add curry powder and cook, stirring, for 30 seconds or until fragrant. Add cauliflower and cook, stirring, for 6-8 minutes, or until golden and tender.

Remove from heat. Add tomato and yoghurt and stir to combine. Season with salt and freshly ground black pepper. Sprinkle with coriander to serve.
