Curly slaw with orange poppy seed dressing
2 piece(s), stalks, about 10cm long, 4cm thick
2 medium, peeled
1 large, red
2 individual, thinly sliced
¼ cup(s), leaves
No added sugar orange juice
¼ cup(s), (60ml)
- Trim any very knobbly bits from broccoli stalks. Spiralize broccoli, carrot and apple. Toss apple with lemon juice in a large bowl to prevent discolouration. Break very long vegetable spirals into shorter pieces.
- Combine all vegetables, green shallots and mint in a large bowl. Whisk orange juice, oil and poppy seeds in a small bowl. Season with salt and pepper. Drizzle over slaw and use your hands to toss to combine.
