The best thing about this viral recipe trend—well, aside from its savoury deliciousness and irresistible crunch—is that it works beautifully as an easy breakfast, lunch, or dinner. As the cheese melts and cooks with the egg, it forms a lacy, crunchy border. For best results, use a dry non-stick frying pan (no cooking spray) and a standard cow’s milk feta; we found sheep’s milk feta to be drier and less prone to crisping. Topped with easy packaged greens and chopped tomato, it’s a tasty handful.


Ingredients
Reduced fat feta cheese
2 tbs
Egg(s)
1 medium
Low carb white wrap
1 regular
Rocket
⅓ cup(s)
Cherry tomatoes
¼ cup(s), chopped
Sriracha sauce
¼ tsp
Instructions

Heat a small non-stick frying pan over medium heat. Sprinkle cheese into the pan into a ring shape about 10 cm in diameter.

When the cheese starts to melt, crack egg into the centre of the ring. Season with salt and pepper. Cook for 1 minute or until egg white begins to set. Cover the pan and cook for 2 to 4 minutes or until the white is set and the yolk is cooked to your liking.

Using a thin spatula, gently lift the egg from the frying pan and place on wrap. Top with rocket, tomatoes, and hot sauce, if desired.
