Ingredients

Dry pasta

240 g, (spaghetti)

Green string beans

500 g, trimmed

Shortcut bacon

125 g, thickly sliced

Swiss brown mushrooms

500 g, chopped

Garlic

2 clove(s), crushed

Extra light sour cream

½ cup(s), (120g)

Oil spray

2 x 3 second spray(s)

Instructions

  1. Cook the spaghetti in a large saucepan of boiling salted water following packet instructions or until tender. Add the beans for last 4 minutes of cooking. Drain, reserving ¼ cup cooking liquid.
  2. Lightly spray a frying pan with oil and heat over medium-high heat. Cook the bacon, stirring, for 4 minutes or until crisp. Set aside. Lightly spray pan with oil and cook the mushroom, stirring, for 5 minutes or until golden. Add the garlic and cook for 30 seconds or until fragrant. Combine the mushroom mixture, bacon and sour cream with the pasta and beans in a bowl. Toss to combine, adding a little reserved cooking liquid if necessary.
